Can I send different lists to different apps?

Yes. Each list (and the Inbox) has a "Push to" setting where you tick which connected apps it should go to. By default a list pushes to all connected apps. If you restrict a list to, say, just Todoist, then pushing that list (or its tasks) skips Reminders and Google Tasks. Apps you've paused show as unavailable in that menu.
