How do I connect Google Tasks?

It's one click. In the Google Tasks card (Settings → Task apps), click "Connect with Google" — your normal web browser opens Google's sign-in and consent screen, you approve, and you're connected. After you approve, the app stays signed in and refreshes itself silently.
